Ingredients

Method

  1. Preheat & pot
    Place the Dutch oven with lid inside the oven. Preheat to 240°C / 465°F for at least 20 minutes.
  2. Dry mix
    In a large bowl whisk flours, salt, baking powder, and baking soda. Rub in the butter with fingertips until the mix looks like coarse crumbs (optional step, but adds tenderness).
  3. Add liquid
    Make a well; pour in 330 g buttermilk (or the milk + acid). Using a spatula or your hand, fold just until no dry flour remains. If crumbs persist, add up to 30 g more liquid. The dough should be soft and slightly sticky.
  4. Shape
    Turn onto a lightly floured surface. Knead 10–15 seconds to bring it together. Shape into a tight round. Transfer to a square of parchment.
  5. Score
    Dust lightly with flour. With a sharp knife or lame, score a deep cross (~1 cm / ½”) across the top.
  6. Bake with steam
    Carefully remove the preheated pot. Lift the dough by the parchment into the pot. Cover and bake 25 minutes.
  7. Finish uncovered
    Remove the lid and bake 10–15 minutes more, until deep golden and the center reads 96–98°C (205–208°F) or sounds hollow when tapped.
